What happened to my great tasting coffee?

Why does that coffee you found in the back of your cupboard taste funky? It could be just a tad bit old. Coffee loses 25% of its flavor in the first 2 weeks after roasting. There are several ways to slow the process, but the best way for you to do it at home is to keep the coffee in an airtight container in a cool, dark place.
The chart below gives you a good indication of what is happening to your coffee.
Coffee will reach its peak flavor 24 - 48 hours after it has been roasted. After that, the flavor will begin to leave the beans. That wonderful coffee aroma we all love is actually the flavor of the beans escaping.
